I’m on Christmas break, and it is official… I’ve lost all track of time. I think that every day is Saturday. So this definitely isn’t a “recipe Monday.” (But I’ll admit I had to look at the calendar to see that it is Thursday.)
Anyway – here is a recipe that Mom made the other night and that I have made before too. I don’t give exact amounts, because the good thing is that you can make a large or a small casserole dish of this, depending on how many you are feeding.
I missed Recipe Monday #3 because my oven broke and I’ve been eating microwavable food… hello undergraduate dorm-living. So yesterday I went to Kroger’s and stocked up on some yummy healthy options that don’t require use of the stove/oven.
I remembered over this Thanksgiving break that this time last year, I was busily booking plane and train tickets and hostels for Allison’s and my trip to Europe. I was finishing up the most demanding semester of my undergraduate career (whew senior workshop!) and reading travel books/daydreaming about the sights I would see in Germany, Austria, England, and Scotland.
